Night of fine food and wine

FOOD lovers can enjoy a specially prepared, four-course dinner carefully crafted by Canterbury Hurlstone Park RSL’s Head Chef at Nu Bambu, Freddie Salim, with matching wines by a wine expert from Accolade Wines on Friday, October 18, from 7pm.

Silver Award winner at the Chef’s Table 2019, Freddie’s sample menu could include: Cold Entree – Kaisen Don (Koshihikari rice, salmon, tuna, razor prawn, scallop and smoked eel); Hot Entree – Three Wise Dumplings (tortellini with chicken liver, mixed mushrooms, pagoda triangle, mix vegetables, vermicelli, gold coin pork and chives); Main – Wagyu beef (with spring vegetables and smoked beef jus); and Dessert – Deep fried ice cream.

Nu Bambu is a casual dining restaurant inspired by bold, fresh flavours, with dishes originating from authentic dining experiences in Thailand, Vietnam, China and Head Chef Freddie’s native homeland of Indonesia, making the most of Australia’s best produce.


Freddie has designed a menu meant for sharing, with dishes that are an uncomplicated balance of flavours. The wine and beer list, by Jackson Sobb, has been carefully selected to complement the menu. It’s open for lunch and dinner but closed on Mondays and Tuesdays.
