Girl whips up way to make money from sweet passion

SHE still wants to go to university at the end of next year but Roselands resident Fatima Mansour might just be too busy by then after launching her cake and dessert business, The Dessert Empire, a couple of weeks ago.

A passionate baker since the age of 11, the now 16-year-old has long been a family treasure whipping up an exciting range of mouthwatering sweets for all occasions.
With gender reveals and birthday parties among her specialties, she says the most popular orders are for the strawberry cheesecake and Nutella mousse dessert cups.
“But ’smash boxes’ for gender reveals are also popular; that’s where I might make a large chocolate heart with pink or blue lollies inside which are revealed as you smash the chocolate,” she said.
Fatima says a lot of the desserts are Lebanese-inspired, with her happily whipping up batches of Knafe with milk, cream, crushed cornflakes, pistachios, syrup, fruit and rose petals or Mafrouki with whipped ricotta or layered pistachio semolina dough sweetened with sugar and flavoured with orange blossom water.
She also produces decadent trifle or Snickers bar dessert cups and always makes extra for the family.
“It’s hard to stop at one,” she said.
The cakes and desserts are not too pricey, though the high quality ingredients do not come cheap but according to Fatima, are worth every cent and bite.
