Dishes up another win for smoked duck

MILPERRA’S Sunshine Meats has done it again, taking out the 2021 Sydney Royal Fine Food Show Champion Award in the Smallgoods and Charcuterie category for Smoked Duck Breast.

After winning champion awards previously in the competition for Best Ham and Nitrate-free Butterfly Duck, Joe Perreira says he is particularly proud of his duck range which he personally developed over time.
“I fell in love with duck about four years ago and would offer some to customers who would say they weren’t used to eating it but would always return to buy more,” he said.
“It hasn’t been a poultry of choice for many people because of its cost but prices are affordable now.”
After selecting the correct duck size and marinating it in a blend of secret herbs and spices, Joe says it then takes time to smoke the breast by hand.
“My heart goes into the whole process,” he said.
A butcher for over 30 years and adding smallgoods 25 years ago, Joe and wife Maria use only Australian pork, chicken, beef, duck and turkey to produce their sought-after products including Double Smoked Chilli Chicken Breast, Portuguese Chorizo, traditional Shortcut Bacon and more.
Along with an online store, their Milperra factory includes a deli-cafe where customers can sample all the products made on site in various dishes plus enjoy freshly brewed coffee and sweets.
