“We only cook with 100 per cent cottonseed oil and nothing is pre-cooked; everything is cooked on the spot,” he said.
You can choose to have your fish with a very light, thin batter, crumbed, grilled or marinated.
John’s uncles have had fish shops in Drummoyne since the 60s and he did a six-year apprenticeship at another family shop in Maroubra.
The end result is a highly experienced chef whose seafood advice you can accept with confidence.
“I have regular customers that come in everyday, they are my biggest fans,” John said.
“And there is always a good range to choose from.
“I have fresh local salmon, John Dory, Barramundi, Ocean Perch, house fish Hoki, handcut scallops, Sydney Rock oysters, prawns and baby occi.
“My seafood sticks and calamari are delicious and very popular for office functions.
“I also offer crunchy chips, homemade salads and bottled or canned drinks.
“I recently catered for a large church function; everybody loves seafood finger food as well as their classic fish and chips, there’s absolutely nothing better.”
Saltwater Seafood is open Monday to Saturday, 10am-8pm, and is also happy to take special orders for any seafood market purchase.
“You can order anything from lobster and sardines to whole whiting or trout and I will have it in for you the next day,” John added.
