Canton Kitchen chef Jason whipped up foodie fan favourite Crispy Master Stock Pork Belly with a Thai Chilli Caramel Sauce and an Apple Mint salad for the judges to sample.
“We have a dish here that is 100 per cent, five out of five – such a delicious pork belly and beautiful salad, absolutely stunning,” Matt said.
Hardly surprised, Jason said he’d attempted to rest the dish from the menu after a few years but the requests to include it again were overwhelming.
“I’m very confident with this dish and thrilled the chefs enjoyed it,” he said.
Matt said the Perfect Plate competition was a wonderful opportunity of club chefs to think outside the box.
“But at the same time, it’s important to do simple well,” he said.
“People used to have a meal at the club because they were already there but now they’re actually going to the club to eat because the food is just so good.”
Courtney agreed, saying club chefs get that seasonality is vital.
“Food in season tastes better and is cheaper,” she said.
“I’ve been travelling around the State sampling meals and the dishes here at Bankstown Sports are amazing.”
